Platinum Pudding Competition

In 2021, Fortnum and Mason, a UK food specialty store that's been in business for over 300 years held a competition for a dessert to celebrate the Platinum Jubilee.  Over 5,000 entries were submitted and they got it down to 5.  Last night, CBC had a wonderful program on the contest.  CBC can dedicate 90 minutes to a dessert but can't broadcast the two hour star studded concert.  I digress.

The entries were amazing and creative.  Here is the winner:

Jemma's Lemon Swiss Roll & Amaretti Trifle

Jemma is a copywriter from Southport. She lives with her long-term partner, James, and their beloved rescue-dog Bella. Jemma started baking when she was six or seven.

'My inspiration is both my gran and my nan. My gran is with us, sadly my nan is not, but they are both extremely important to me. My gran taught me how to bake but my nan's signature dish was a trifle, [so] this dish is an absolute tribute to them both,' said Jemma.

'I found out that The Queen had lemon posset at her wedding so I decided the pudding had to be based around the lemon flavour. My gran and my nan, they very much liked lemon as well, so it all just slotted into place.'

The recipe is in PDF format so if you want to try it, here is the link:

Platinum Jubilee

I looked forward to this weekend for a long time.  I'm a Monarchist and enjoy the pomp and circumstance the Brits have in their traditions.  I've always admired Queen Elizabeth for her years of service to her country and the Commonwealth.

I recorded the Trooping of the Colour and the Service of Thanksgiving at St. Paul's Cathedral.  I didn't watch them in the middle of the night, but after dinner when I had no interruptions and I could enjoy it all.

Yesterday, I tried to find the Platinum Party at the Palace on TV.  It was not being broadcast by any Canadian television station.  I tried to find it on You Tube but could only find small clips.  Then I saw ABC in the US was broadcasting it.  What happened to our Canadian networks?   I watched it and it was excellent.  I'm hoping it will be rebroadcast so anyone who wants to watch this memorable concert can see it.

It start with Queen and ended with Diana Ross.  Prince Charles made a beautiful tribute to "mummy" and Prince William talked about the planet.  The speeches were short.  I must sat the Brits really know how to celebrate!  This performance had something for every taste.

If you have walked the Mall, you can see how far back these people are.  There were TV's so they could see the performance.  With tickets, they were there eight hours before the show started.

I hope Canadian channels show this in it's entirety at a later date.  If you didn't see it, I found this 2 minute video of highlights of the concert on You Tube:

A wonderful father, Canadian and international superstar!

Michael BublĂ© was born in Burnaby a suburb of Vancouver.  He's always been a home town guy.  He built a beautiful family home close to where he grew up.  The basement of his new home has a full size hockey rink.  He loves sports.

He came from a wonderful Italian family.  He is very family oriented and took his three children to the local baseball game at Nat Bailey Stadium in Vancouver.  This is what happened:

The Platinum Jubilee

I recorded the Trooping of the Colour and will watch it later.  I can't wait to see all the pictures of the festivities in the UK and I hope the Queen's health is still good enough she can enjoy this wonderful day!

Yesterday was the fifth anniversary of my visit to Buckingham Palace.

The Queen looked amazing!

The Prince was still in good health

On the grounds, if you ever get invited, wear flat shoes!
I read that before I went and I did.  Some ladies actually took their shoes off as they sunk in the grass

Not my picture, taken from the roof of Buckingham Palace
8,000 people get invited to each of four parties every spring

We were fortunate it was a hot day, so we sat in the shade
There was a garden party last week and it rained!  I saw the Duchess of Cambridge in a gorgeous outfit, with an umbrella and she looked unfazed!  They are incredible hosts.

There was tea, coffee, apple juice, sandwiches and gorgeous cakes.  Great presentation.
The Queen and Prince left and we all walked through the palace to the Mall!  It was great walking through the palace.  We were asked not to take pictures inside.

A day I will never forget!
